Delicious Non-Dairy Ice Cream
I have a confession. I have a serious love affair with sweet treats. Here’s a quick and easy way to satisfy the craving for sweets without sacrificing your health to processed sugar and unwanted diary products. This creamy non-dairy ice cream will not disappoint you!
Ingredients:
You will need: A food processor or a Vitamix ( a high powered blender works too)!
- 4-6 Ripe Frozen Bananas
- 1/4 Cup of natural Peanut Butter ( I used the Once Again unsalted, unsweetened Organic)
- 1/4 Cup of Coconut Milk
- 1 TSP Vanilla Extract
- Non-Dairy Dark Chocolate for shaving (optional)
Directions:
Add your coconut milk to your blender, then add your frozen bananas. Pulse for one minute then add your peanut butter and vanilla extract. Blend until smooth. Don’t over-blend or the mixture will become too runny. You want a smooth creamy, ice cream texture.
Place your ice cream in a freezer safe dish and place in the freezer for at least 1 hour. I top my ice cream off with non-dairy dark chocolate shavings!
