Stuffed Bell Peppers for the win!!
Often times being Plant-based or Vegan can be intimidating to the meat eater because they are under the impression that “you can’t get full off eating plants.” Boy are they wrong! These stuffed bell peppers are so hearty and filling that no one will miss the meat. I served my stuffed peppers with a quick and easy side salad!
Ingredients:
2-3 Medium to Large Bell Peppers (Your choice of colors though the yellow tends to be sweeter)
1 cup wild or brown rice
1 cup English peas
1/2 white onion
1 cup of nut based meat (Optional) I used Neat Italian Mix
Side Salad:
2 cups Mixed greens
1 cucumber
1/2 onion
1/2 cup shredded carrots
Black olives (Kalamata)
Artichoke hearts
1 Tomato
*Be sure to thoroughly wash and clean your produce prior to using
Prepare the rice and the neat mix beforehand. I add frozen peas and my onion to my rice when it is done cooking and allow the steam .
Cut the tops off of your bell peppers and gently remove the seeds. Then stuff with the rice and neat mixture. Place in oven (Pre-heated at 350) allow to cook for 10-15 minutes. You can also top the peppers with your favorite vegan/plant based cheese before placing in the oven!
Serve Vegan Stuffed Bell Peppers with side salad!
