These are not your average Tacos!
Plant Based Tacos with a walnut meat filling. These are always a hit whenever I make them. Plus they are quick and easy to make using only a few ingredients.
I made a side of Cauliflower Rice and Beans to complete this delicious meal!
Walnut Meat Ingredients
1 Cup of Walnuts
1 teaspoon Cumin
1 tbsp Organic Taco seasoning (I Like This One)
1/2 tsp Red pepper flakes
Process the ingredients in food processor until they reach a crumbly taco meat like texture. *Don’t over process*
You can always add more seasoning to suite your own taste and desires!
Taco Filling
Tomato ( I used green and red)
Green leaf lettuce
Avocado
chopped onion
fresh cilantro
I used gluten free yellow corn shells to stuff my Tacos!
Cauliflower Rice
Process 1 medium to large cauliflower head in food processor until it is chopped into small pieces.
Sauté rice on stove top on low setting for 15-20 minutes using bay leaves, dried cilantro, garlic, and black pepper.
Beans
1 Can of organic BPA free canned black beans. Add bay leaves and liquid smoke. Cook on stove top (medium heat) for 10-15 minutes.
